There is a lot of interest from the existing vegan cheese makers for vegan sources of the common bacterial cheesemaking cultures.

Media Components

Phytone and Soytone

These are enzymatic digests of soy, similar to tryptone (tryptic digest of casein). Soytone typically refers to a tryptic digest of soy (using trypsin, a porc digestive enzyme), while phytone typically refers to a completely animal-free papain digest of soybean meal. Contains amino acids and peptides, plus a naturally high concentrations of vitamins and carbohydrates.

Yeast extract

Concentrate of the water soluble portion of autolyzed yeast. Rich in vitamins, minerals, and digested nucleic acids.

Malt extract

The water-soluble portion of malted barley. Due to the extraction process, this animal free supplement provides a very high carbohydrate content to any medium.
